Yogurt Parfait

Serves 1

Yogurt parfaits are ridiculously easy to make and sure to make any little tummy smile. All you need are three ingredients: yogurt, fruit, and granola. Assembling them is hassle-free and a great way to get your kids involved (since they are more likely to eat something they feel proud of). Measure the ingredients and cut the fruit before hand. Then let your child build away! Crunchy, sweet, juicy…what child could resist?

Ingredients

½ cup plain low-fat yogurt
1 cup mixed fruit, sliced (Use your child’s favorites here. I like slices of strawberry and banana, but you can easily use blueberries, raspberries, or orange segments)
½ cup granola
1 tablespoon honey (optional)

Directions

In a tall, clear glass layer two tablespoons each (approximately) of the yogurt, fruit, and granola in that order. Repeat until you reach the top of the glass and end with a layer of yogurt. If desired, you can add the honey in between layers or save it all for a drizzle on top.
