How many times have you been told to, “Finish your veggies?” For me there has been way too many to count!
Vegetables, it seems, have gotten a bad rap from children and adults alike everywhere. Most likely it is because people simply don’t know how to cook them. They just boil or steam it away, and what they end up with is a plateful of extremely bland mush.
And nobody wants mush.
But vegetables are better than that. Vegetables can be smoky and
charred on the grill outside. They can be roasted in the oven. Or they can even be eaten raw with just some peanut butter!
By munching on healthy vegetable snacks, you can be sure that you are eating only the freshest produce of the season (unlike those potato chips that expire next month).

Simple Tomato Salad
Ok, so technically tomatoes are not vegetables (they are fruits because they have seeds). But everyone (including the supermarket) considers them veggies, so here they are on this page! I love fresh tomatoes for their juiciness and meaty texture. This simple tomato salad uses only a few simple (but fresh) ingredients to enhance the wonderful flavor of the tomato. It’s the perfect pre-dinner snack.
