Turkey Roll Ups

Who says you need a tortilla to create a delicious and healthy roll up? Turkey roll ups are just as simple and yummy as they sound – tender slices of turkey breast wrapped around crunchy red pepper slices and salad mix, accompanied by a tangy honey mustard. When you are craving something refreshing yet satisfying, these roll ups will definitely hit the spot!
Ingredients
˝ teaspoon Dijon mustard
˝ teaspoon honey
2 slices reduced sodium deli turkey breast
1 cup baby spring salad mix (roughly 2 palmfuls)
˝ cup red pepper, sliced (about 3 inch long slices)
2 mint leaves (optional)
Directions
In a small bowl, whisk together the Dijon mustard and honey until well combined.
On a cutting board, lay the slices of turkey next to one another, and spread half of the honey mustard mixture on top of each slice. Place one small palmful of spring salad mix and a couple of slices of red pepper on top of each turkey slice. If desired, top with a mint leaf. Carefully “roll up” each slice of turkey and serve. Dig in!
