Tomato Sandwich
There is nothing more refreshing and simple than a good tomato sandwich. Juicy, ripe tomatoes and a garlicky basil mayonnaise spread are the stars in this recipe. This sandwich is an elegant snack for work, on long road trips, or for those late night excursions to the kitchen. This is one of my all-time favorite healthy snacks!
Cooking Tips…
For slicing the tomato and cutting the sandwich on a diagonal, I like to use a serrated knife. It makes clean cuts without squeezing out the juices of the tomato. Other knives usually end up destroying the tomato, leaving a big puddle of tomato juice on your cutting board. Yup, a serrated knife will fix that!
If you are not afraid to get a little messy, spread the entire 3 tablespoons of mayonnaise spread onto your sandwich. The water from the tomato slices will come out and thin out the garlicky mayonnaise spread. If you like licking your fingers like me, then it’s probably no big deal. Otherwise, use only 2 tablespoons of the spread to achieve a “neater” tomato sandwich.
Even though, this is just a tomato sandwich, feel free to add other fresh ingredients into the mix. Try adding a couple slices of mozzarella cheese or crisp cucumber slices. Or, you can sprinkle a pinch of ground black pepper for a little spice!
Tomato Sandwich Recipe

Serves 1
Ingredients
3 tablespoons Garlicky Basil Mayonnaise Spread
2 slices whole wheat bread
1 vine ripe tomato, sliced
Directions
Spread the basil mayonnaise on top of each slice of bread. Place the tomato slices evenly on top of one slice of bread. Place the other bread slice, mayonnaise side down, onto the tomatoes. Cut diagonally and serve.
