Guacamole

Serves 3

Here is a healthy guacamole recipe that doesn’t skimp on flavor. Add a pinch of cayenne and ground cumin for maximum “YUM”-ness. Serve this alongside whole grain tortilla chips at your next party, and your guests will forget all about the cheese dip!

Ingredients

3 avocados – peeled, pitted, and mashed
1 lime, juiced
1 teaspoon salt
2 tablespoons fresh cilantro, chopped
2 Roma (plum) tomatoes, seeded and diced
1 small onion, diced
1 clove garlic, minced
1 pinch cayenne (optional)
1 pinch ground cumin (optional)

Directions

In a large bowl, mix together the avocados and lime juice. Fold in the salt, cilantro, tomatoes, onion, and garlic. If desired, stir in the cayenne and ground cumin. Refrigerate for 1 hour, or serve immediately.

Healthy Benefits
Avocados contain many beneficial minerals such as vitamin C, calcium, potassium, and dietary fibers. They help regulate blood pressure and lower cholesterol as well! Tomatoes have a powerful anti-oxidant, Lycopene, that helps fight off many types of cancers.
